Vodka

Our Vodka is sourced from California grapes that are processed and create a wash using our long fermenting proprietary yeast strains to create at 15% ABV at the end of our 2 week fermentation process. The wash is then distilled 3 times through our hybrid stills and micro-batched out with our distilliate coming off at 65% ABV. The spirit run is then proofed down to 40% ABV using our artisanal water sourced from a spring located in the Adamello Brenta National Park in Trentino Italy.

Gin

Our London Dry Gin starts out with a curated recipe of 12 hand selected and carefully sourced botanicals that are vapor distilled into our Wheat based spirit. Using a single run through our hybrid still provides for a heavy presence of aromatic components for the micro-batched spirit that comes off the still at 65% ABV. The spirit run is then proofed down to 41% ABV using our artisanal water sourced from a spring located in the Adamello Brenta National Park in Trentino Italy.

White Rum

Our White Rum is produced from A test Molasses and sugar sourced from Louisiana. The wash goes through a 10-to-15-day fermentation using proprietary yeast strains bring the wash to a 15% ABV. The wash then is run once through our hybrid still coming off in our micro-batching at 65% ABV. The distilliate then is blended and then proofed down to 42% using our artisanal water sourced from a spring located in the Adamello Brenta National Park in Trentino Italy.

Dark Rum

Our Dark Rum takes off from a starting point of our Light Rum at 65% ABV to then be moved into barreling in our medium toasted previously used Red wine barrels (Either Malbec or Cabernet Sauvignon) from our winery. The barrels are rotated through the inside and on the deck at our distillery to provide full environmental exposure and accelerated tropical maturation. Using careful monitoring we see a 10% angel share evaporation during our 9 month tropical maturation process. The final matured spirit is then proofed down to 42% using our artisanal water sourced from a spring located in the Adamello Brenta National Park in Trentino Italy.
